Ingredients

  • 1/4 cup canola oil
  • 2 medium potatoes, peeled and cut into 2-inch cubes
  • 2 large carrots, peeled and cut into 2-inch cubes
  • 1 onion, peeled and chopped
  • 4 cloves garlic, peeled and minced
  • 1 thumb-size ginger, peeled and julienned
  • 3 pounds beef chuck roast, cut into 2-inch cubes
  • 1 tablespoon fish sauce
  • 2 cups water
  • 1 can (13.5 ounces) coconut milk
  • salt and pepper to taste
  • 2 tablespoons curry powder
  • 1/2 red bell pepper, cored, seeded and cut into strips
  • 1/2 green bell pepper, cored, seeded and cut into strips
