Ingredients

For the Salad

  • 4 boneless chicken breast 4 oz. each
  • salt and pepper to taste
  • 1 wonton wrappers 12 oz. package, sliced into thin strips
  • 1 cup oil
  • 1 Romaine lettuce heart chopped
  • ½ head cabbage shredded
  • ¼ head red cabbage shredded
  • 1 large carrot peeled and shredded
  • ½ red bell pepper seeded and chopped
  • 2 green onions chopped
  • ¼ cup peanuts chopped

For the Spicy Peanut Dressing

  • 3 tablespoons smooth peanut butter
  • 2 tablespoons red wine vinegar
  • 1 tablespoon fresh ginger finely grated
  • 1 clove garlic finely-minced
  • ½ teaspoon Sriracha sauce
  • juice of 1 lemon
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 teaspoon sugar
  • 1 tablespoon sesame oil
  • 3 tablespoons canola oil
