Ingredients

  • 1 pound medium shrimps peeled and deveined
  • 1 egg white
  • 1 tablespoon cornstarch
  • 2 tablespoons oil
  • 1 small onion peeled and sliced thinly
  • 2 cloves garlic peeled and minced
  • 1 large carrot peeled and sliced thinly on a bias
  • 1 stalk celery sliced thinly on a bias
  • 1 cup frozen green peas thawed
  • 1/2 cup cashews
  • salt and pepper to taste

For the Stir-fry Sauce

  • 1/3 cup water
  • 1/3 cup soy sauce I used Kikkoman
  • 1/4 cup oyster sauce
  • 2 tablespoons Chinese cooking wine
  • 1 teaspoon brown sugar
  • 1 teaspoon cornstarch.
